Week 1: October 1, 2012
Paradigm just kicked off Week 1 of a 14-week, 100-day healthy eating initiative inspired by the blog 100 Days of Real Food, which emphasizes eating whole foods and eliminating processed foods from one’s diet.
Our first challenge in this initiative is to consume three locally grown/raised whole foods this week. Many of us don’t realize how far our food has traveled by the time it reaches our plate. On average, food has commuted 1,500 miles and for 4-7 days before we eat it. In that time, a significant portion of nutrition is lost.
For many of us, having an awareness of where our food isn’t necessarily a priority. Not to mention, living in Minnesota, our window of opportunity to enjoy fresh, LOCAL produce is a lot smaller than in warmer climates. But as it is early October, we have terrific local farmers markets including the St. Paul Farmers Market, Minneapolis Farmers Market, and the Nicollet Mall Farmers Market right downtown Minneapolis that all last through the month.
