Week 3: Paradigm’s 100 Days of Healthy Eating


Week 3:  October 15, 2012

For Week 3 of Paradigm Court Reporting’s 100 Days of Healthy Eating, our focus is on meat.  The challenge is to consume four servings or less of meat this week.  For many of us carnivores, this will prove to be a difficult challenge.  We are seeking out delicious vegetarian recipes and looking to find protein in other non-animal sources.

The benefits of reducing meat consumption in one’s diet are numerous.  There have been many studies that link red and processed meat to certain kinds of cancer.   Reducing meat consumption in general may also reduce one’s risk of diabetes and heart disease.  For more information on going meatless, visit this great website:  http://www.meatlessmonday.com/why-meatless/

For those of us who enjoy dining out, there are many vegetarian-friendly restaurants in Minneapolis and St. Paul!  “Staying Fabulous” and eating more plant-based protein go hand-in-hand.
