What seemed like a simple task proved to be more difficult than expected this week… For Week 7 of Paradigm Court Reporting‘s 100 Days of Healthy Eating, the challenge was to eat whole grains when consuming grain products. One thing that became apparent quickly is how confusing it is to shop for bread. There are so many ways that one could be misled by a label. The trick is to make sure the first ingredient is “whole wheat flour.” Even breads that claim “all natural” or “7-grain” can be made with enriched, bleached white flour. Why can’t they just be honest and tell us what we’re eating?
The reason to seek out whole grains over processed, white grains is that “they’re naturally low in fat and cholesterol free; contain 10% to 15% protein, and offer loads of healthy fiber, resistant starch, minerals, vitamins, antioxidants, phytochemicals, and often, phytoesterogrens.” (WebMD) While all grains require some processing, whole grain products are much closer to the purest form of the food found in nature. And after all, isn’t that what this challenge is all about — real food?
